So I was in Sweden recently and was exposed to the wonders of smoked reindeer heart and smoked reindeer rump. I think it's my new favorite meat. Are there any online/mail-order sources in the US that sell it? Maybe in...Minnesota, or Alaska, or something?
rotus: Vapiti/Elk, they say it is a bit like that. I know that roe dear and reindeer has different texture to the meat and when it comes to the heart it is just the same BUT they way a heart is smoked up north is different from the south and the heart is expensive even here, Reindeer meat is more like European Elk a smaller cousin of the moose, but still not the same.
Reindeer and roe deer steaks/meats are wonderful. All kinds of smoked reindeer bits are quite normal in Norway, too. (Pics -in .gif file, are small but you have an idea how normal it is in Norway to see this kind of thing there)
There are several other sources in Alaska to get reindeer and other game meat, but those are the two companies up here that I can personally attest to the quality of their products. (If you like lox, these are wonderful: -Salmon.aspx)
We get up to Cincinnati and visit Jungle Jim's on occasion. It's certainly an experience not to miss if you get anywhere near one! I've never looked for Reindeer meat there but I would think it's quite possible they may have it, they have so much exotic stuff.
I keep hoping a local grill that specializes in game meats will give it a try - they've offered burgers and sausage dogs with elk, camel, pheasant, python -- maybe one of these days. I asked the guy one time about where to get this stuff and he just said it was a commercial supplier.
Yes caribou are the same species. I still remember eating delicious reindeer in Sweden when I was a 7 year old. The only time I've eaten 'bou it wasn't so great due to the preparation. It was poached (;-) then fried on a camp stove to ultra-well done. I had nothing to do with it except the eating.

A stew called bidos is one of the most traditional reindeer recipes, often eaten on Feb. 6, Sami National Day. Bidos is made with slow-cooked reindeer meat (often including the heart), potatoes, carrots, onions and butter.
However, how the meat tastes is generally dependent upon how the animal is fed. Wild reindeer that graze on natural or managed pastures might have a more gamey flavor, while those that feed on grains will have a milder taste.

The summer reindeer roundup is a big community event and despite the incessant rain, wind and cool temperatures, nearly 50 people from Teller climbed into their motor skiffs and took the uncomfortable boat ride upriver to the reindeer corral, where Canyon Creek meets the Kuzitrin and Imruk Basin. In exchange for reindeer meat and the excitement of the roundup, the community helps with the counting, castrating and cutting. For the herder, it means writing up a huge shopping list, getting groceries from Nome and hauling all that up to the corral to feed the helpers.
But just as Olson rounded up the reindeer and pushed about 1,700 head into the corral, wind picked up and blew over the fence. Half of the rounded up animals escaped. Olson said the previous year, things went smoother and he managed to round up 2,800 reindeer.
He said that almost every major meat distributor in Alaska is looking to buy reindeer meat and that meat processors are literally waiting in line to get their hands on good quality reindeer meat. Reindeer meat is valued because it is tender and tasty while rich in protein, high in minerals and low in fat and cholesterol.
Finstad said as the college works the kinks out of the unit, he plans to teach workshops and to train people to knowledgeably process reindeer meat to have it USDA inspected on the spot and shipped to Alaska meat processors. The mobile unit is currently stored at Northwest Campus in Nome, and he hopes to take it to the villages in years to come for training and workshop sessions.

You can buy reindeer meat (poronliha) in any supermarket. The "Herkku" gourmet supermarket in the basement of the Stockmann department store (corner of Mannerheimintie and Aleksanterinkatu) is pretty epic has been completely nerfed and can't be recommended in good conscience anymore. The Old Market Hall (Vanha kauppahalli) is your best bet in central Helsinki for this or anything else Finnish; it's upmarket, but not hugely expensive.
The canonical way to prepare it is sautéed reindeer (poronkäristys), served with mashed potatoes (preferably using Lappish potatoes, puikulaperunat) and lingonberry puree, and you'll find ready-to-cook bags of reindeer shavings in the freezer section. You can also find reindeer sausages, meatballs, sliced meats etc in the deli section, but most of these are (IMHO) overpriced and terrible. Reindeer steak I would steer clear from, the meat is quite dry so it's pretty hard to get this right.
In most of Europe, you do not see reindeer meat to buy all that often. But in Sweden, there are quite a number of reindeer herders and they are looking for new markets for their product. An Operational Group in Sapmi involving reindeer herders, a slaughterhouse, retailers and food experts, is working on new ways to produce, transform and market this meat, but also new ways of organising the business across the supply chain. 041b061a72
